This dish is amazing for the colder weather that’s coming up! You can make it more spicy, more liquid-y (like a soup!) or add lentils for more protein. It’s the favourite dish of our secretary.
Servings: 2-3*

Ingredients:
- 500gr precooked potatoes
- 250gr green beans
- 4 tomatoes
- 2 unions
- 3 cloves of garlic
- 2cm ginger
- 200ml coconut milk
- 1,5tbsp kerrie
- 1tsp curry madras
- 1tsp cumin
- salt



Step 1:
Dice the unions, mince the garlic and the ginger and cut off the tips from the green beans. Cut the tomatoes however you like them.
Step 2:
Boil the green beans for around 2 minutes, then drain them
Step 3:
Fry the unions, garlic and ginger in a big pan until the unions become translucent
Step 4:
Add a little oil if needed, and add the spices (kerrie, madras, salt and cumin)
Step 5:
After 2 minutes, add a splash of water and the potatoes.
Step 6:
After a few minutes, add the tomatoes, the green beans and another splash of water. Let this cook for 5 minutes.
Step 7:
Add the coconut milk and cook it until the liquid gets the thickness you’d like.
