This lemon cake is an amazing treat to bake in your free time. It doesn’t take a lot of weird or expensive ingredients, and is quick to make.

*Servings are different from person to person, this is just an estimate. It also depends on how thick/tall your cake will be


  • 225gr flour
  • 100gr sugar
  • 15gr baking powder
  • 180ml plant milk
  • 120 vegan butter
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 60ml lemon juice

You can substitute the lemon juice & zest with orange or grapefruit.

Step 1: Melt your butter in the microwave, and preheat your oven to 180℃.

Step 2: Combine all the ingredients together, it’s the easiest when you first do all the dry ingredients and add the wet ones on top. You can stir it with a spoon or fork, you don’t need a mixer for this.

Step 3: Put the batter in a cake tin and put it in the oven for between 35 and 45 minutes. It depends on your oven and what tin you use how quickly it bakes.  We recommend you check at the 35 minute mark to see if it’s ready yet. You can do that by sticking a tooth pick in it, it’s ready when the pick comes out clean!

Step 4: Eat it like this, or make a glaze. You can make it with 50gr powdered sugar & 15ml lemon juice. Pour the mix over the cake and wait until it’s cooled down.
